How To: Red Oil Dumplings
Dumplings are beloved worldwide, from Japan’s gyoza to China’s shumai to Vietnam’s wontons. At Mecha, we flipped the script to spotlight the filling—meaty, flavorful, and almost like a tender meatball. Our dumplings are pan-steamed to perfection: first boiled, then seared to create a half-crispy, half-chewy texture that’s undeniably satisfying. Packed with bold flavor, they’re a delicious upgrade on a classic favorite.
Try them with our signature red oil sauce for a spicy, savory kick that takes it to the next level.
Cooking Instructions:
Preheat your pan – Use a frying pan with a lid and set it over medium-high heat. Add about 1 tablespoon of oil.
Sear both sides – Place the dumplings in the hot pan and sear on both sides until golden brown.
Steam to finish – Carefully add 1 cup of water to the pan and immediately cover with the lid. Watch out for splashing from the hot oil.
Check doneness – Once all the water has evaporated, remove the lid. The dumplings should reach an internal temperature of 160°F.
Garnish and serve – Transfer to a plate or bowl. Pour over Mecha’s Dumpling Sauce and top with scallions, cilantro, and crispy fried shallots.
